Vegan Chocolate Cake Recipe

Ingredients for the Cake Layers

Sugar: 10.6 oz (300 g)
Cocoa powder: 2.8 oz (80 g)
Vegetable oil: 4 fl oz (120 ml)
All-purpose flour: 16.9 oz (480 g)
Salt: ½ teaspoon
Baking soda: 2 teaspoons
Vinegar (9%): 2 tablespoons
Water: 12.5 fl oz (370 ml)

 

Ingredients for the Cream

Sweet juice (any kind): 17 fl oz (500 ml)
Semolina: 3 tablespoons

 

Ingredients for the Glaze

Water: 7–8 fl oz (200–250 ml)
Cocoa powder: 3 tablespoons
Vegetable oil: 1 tablespoon
Sugar: 2 tablespoons
All-purpose flour: 1 tablespoon

Instructions

  1. Prepare the Cake Batter:

    • In a large mixing bowl, combine cocoa powder, flour, sugar, baking soda, and salt.
    • Pour in the water and vegetable oil, mixing until well combined and smooth.
    • Add vinegar and stir once more.
  2. Bake the Cake:

    • Line the bottom of a 9.5-inch (24 cm) round cake pan with parchment paper and pour the batter into the pan.
    • Preheat your oven to 356°F (180°C) and bake for 40–50 minutes. Check for doneness by inserting a toothpick; it should come out clean.
    • Once baked, remove the cake from the pan and allow it to cool completely.
  3. Make the Cream:

    • In a saucepan, combine the sweet juice and semolina. Cook over medium heat, stirring continuously until the mixture thickens.
    • Let the cream cool completely, then beat it with a mixer until fluffy.
  4. Assemble the Cake:

    • Once the cake is cool, slice it into three layers.
    • Spread the cream on the top of two layers and stack them on top of each other, then place the third layer on top.
  5. Prepare the Glaze:

    • In a saucepan, combine cocoa powder, sugar, and flour. Add the vegetable oil and gradually pour in warm water while stirring to avoid lumps.
    • Cook the mixture for 2–3 minutes until thickened, stirring continuously. Remove from heat and let it cool to room temperature.
  6. Glaze the Cake:

    • Pour the glaze over the top and sides of the assembled cake, ensuring an even coating.
  7. Chill:

    • Refrigerate the cake for 2–3 hours to set the glaze before serving.
